Chinese Dumplings

Chinese dumplings (Jiaozi) are very popular during the Chinese New Year season

Ingredients:

  • Jiaozi dough:
  • 3 cups all-purpose flour
  • up to 1 1/4 cups cold water
  • 1/4 teaspoon salt
  • Filling:
  • 1 cup ground pork or beef
  • 1 TB soy sauce
  • 1 teaspoon salt
  • 1 TB Chinese rice wine or dry sherry
  • 1/4 teaspoon freshly ground white pepper, or to taste
  • 3 TB sesame oil
  • 1/2 green onion, finely minced
  • 1 1/2 cups finely shredded Napa cabbage
  • 4 tablespoons shredded bamboo shoots
  • 2 slices fresh ginger, finely minced
  • 1 clove garlic, peeled and finely minced

Sweet and Sour Fish

Ingredients:

  • 2 Fillets of Breaded White Fish for baking (eg Plaice, Cod, Whiting)
  • 1 Brown Onion, sliced thinly
  • 2 Tbsp Tomato Ketchup*
  • 1 Tbsp Worcestershire Sauce*
  • 1 tsp Light Soy Sauce*
  • 2 Tbsp Sugar
  • 100ml Water
  • 1 tsp Cornflour mixed with 1 Tbsp Water

Method:

  1. Bake fish according to package instructions.
  2. Heat a little oil in a saucepan. Stir-fry the onion slices until fragrant and translucent.

Salmon with Black Bean Sauce

Ingredients:

  • 2 slices of Salmon, rubbed with a little salt
  • 1 tsp Sesame Oil
  • 3 Stalks Spring Onion
  • 1 tsp Minced Garlic
  • 1 Tbsp Light Soy Sauce
  • Dash of Pepper
  • 1 Tbsp Black Bean Paste
